Homemade Chocolate Covered Marshmallow Easter Eggs

My friend who shares my same first name taught me how to make these Easter eggs. It has become a family tradition. I know this is kind of belated, so many of you won't have time to do this, but I wanted to document how to do it on my blog so that my family can learn.

Marshmallow ingredients:
2 pkg. unflavored Gelatin (disolved in 1 Tb. cold water)
1 cup boiling water
2 Cups sugar
1/2 tsp. vanilla

You will also need a small crispy cookie. Marie Lu used to make a small cookie, but I haven't been able to find it recently. I have used the big round ones and broken them in 4 pieces, but this year I found some alphabet cookies that seemed to work well.















You will also need a candy dipping chocolate. Walmart sells these for about $3.67 a bag. I used about 2 bags for one recipe.















The first step in making the eggs is to fill two jelly roll pans with flour. Smooth it out even.














You will next need either a mold like the one below, or an egg. Press the mold in to the flour to make the egg molds. YOu could use a single egg and do it over and over, but since I make these every year, I invested in an aluminum mold.



















Mix the gelatin powder with 1 tb cold water.

















Now add 1 cup of boiling water and stir until gelatin completely dissolves.
















For the next step, I suggest you have someone to help you. Add the sugar and vanilla to the gelatin mixture.















Next beat the mixture with an electric mixer until the marshmallow forms soft peaks. You don't want it to set up all the way in the bowl. You kind of want it the texture of soft pudding. You will have to work quickly once it starts to set up.















Work quickly and spoon the marshmallow in to the flour molds. Have someone else put a cookie on the top of each egg.



















Put the chocolate pieces in a glass bowl and microwave on high for 1 minute. Stir, then microwave another 30 seconds. It should be hot enough now that as you stir, the chocolates will finish melting. Do NOT over cook the chocolate, or it will change the texture. If the chocolate hardens while you are working with it, you heat it again for another 20 seconds or so. When the chocolate is completely melted, you can begin to dip the eggs. Put an egg cookie side up in the chocolate. Push it down until the sides are covered. My friend refers to this as "sinking the ship". Then you will use a spoon to turn it over in the chocolate. Spoon some of the chocolate over the spaces that didn't get covered. Then lift it out of the chocolate, cookie side down, and place on a piece of waxed paper.

It would be hard with a 2 year old helper but it looks like something fun I'll have to try when she goes to sleep and I can have a "hubby helper", I'm sure he'd like the reward. He's got a big sweet tooth.

I've done the homemade marshmallow part,but I never thought to put a cookie with them and dip them in chocolate.
